Looking for a healthy yummy snack to use of some of your Rice Krispies stash from the AWESOME deal at Tops last week?
Here it is! This is also diabetic friendly (my husband has Type 1!) It is low in sodium and carbs!! My girls really enjoyed these!
Peanut Butter Snack Bars
3 Tablespoons creamy peanut butter
2 Tablespoons Agave Nectar or Maple Syrup or Molasses or anything liquid you have in the house. I used Agave nectar
1 Tablespoon Coconut Sugar ( or any type of sugar you have in the house)
2 Egg Whites
2 Tablespoons Ground Flax seeds ( I buy the seeds whole because it is cheaper and than grind in my blender!)
4 cups Rice cereal
1/2 cup sliced almonds ( optional)
A couple shakes of Mini Chocolate chips ( Sorry I didn’t measure these! I just sprinkled in!)
1. Spray a 9×9 in. square baking pan with nonstick cooking spray. Preheat oven to 350 Degree F.
2. Place Peanut butter in micowavable bowl and use 30% power and heat for 40 seconds or until PB is melted. Stir in Agave Nectar or which ever syrup you choose, cool.
3. Place egg whites and flax seeds in blender, blend until foamy. Pour into large bowl. Add peanut butter mix and stir until smooth. Stir in cereal and almonds until smooth.
4. Press cereal into prepared pan.
5. Bake for 18-25 mins. My oven gets hotter than normal so I did mine for 18 mins. Cool on wire rack!
